Vegetable oil spray 2 cups frozen whole kernel corn 4 large eggs ¼ teaspoon chili powder ¼ cup salsa ¼ cup shredded fat-free, or low- fat Cheddar cheese Instructions, 1) After preheating the oven to 300 degrees, heat a medium non-stick skillet over medium heat. 2) Cook the sausage for 6 to 8 minutes until cooked through. 3) Pour the sausage into a colander, and rinse under hot water to remove excess fat, drain well and wipe the skillet with paper towels. 4) Wrap the tortillas in aluminum foil and warm in the oven for 10 minutes. 5) Lightly spray the skillet with vegetable oil spray. 6) Cook the corn for 4 to 5 minutes until warmed through, and stir in the eggs and chili powder. Cook for 3 to 4 minutes, and then stir in the cooked sausage. 7) To assemble, put ½ cup of the egg mixture down in the middle of each tortilla, and top each with 1 tablespoon salsa and 1 tablespoon cheese. Fold the bottom, then the sides, then the top of each tortilla toward the center. This amount makes 6 servings.
