  • Crema Catalana

    Ingredients:

    900ml of milk

    Pared rind 1 lemon

    Pared rind 1 orange

    1 cinnamon stick

    8 egg yolks

    8 tablespoons caster sugar

    2 tablespoons corn flour

    Pinch grated nutmeg

    Instructions

    1. Place the milk, lemon rind, orange rind and the cinnamon stick into a pan, place the bowl over a medium heat, allow the mix to boil and simmer gently for 5 minutes, then remove from the heat and leave it to cool for 15 minutes. Try to remove peel and cinnamon stick.

    2. Mix the egg yolks and half of the sugar together in another bowl, it is until thick and pale, then gently add the corn flour. Pour half of the infused milk over the beaten egg yolks and stir well then pour the other half in the pan and whip to combine.

    3. Place over a low heat and cook and stir continuously until the mixture is thickened, then pour into the dishes and cool for at least 4 hours.

    4. Shake over the remaining sugar and nutmeg over the custard mixture, and then place the dishes under a hot grill to dissolve the sugar, and give it a nice golden color.

  • Individual Lime Cheesecakes

    This is a delightful dessert which can please the palate and aid in the planning of desserts for diabetics.

    Ingredients:

    12 vanilla wafers

    ¾ cup of fat-free cottage cheese

    8 ounce of softened Neufchatel cheese

    ¼ cup sugar

    2 eggs

    1 tbsp grated lime rind

    1 tbsp fresh lime juice

    1 tsp vanilla extract

    ¼ cup of low-fat vanilla yogurt

    2 medium peeled kiwifruit, sliced and halved

    Instructions:

    1. Prepare 12 muffin pans and line them with paper baking liners, then place 1 vanilla wafer in the bottom of each liner.

    2. Blend the cottage cheese in a food processor until smooth.

    3. Mix the cottage cheese with the Neufchatel in a medium bowl, and beat at medium speed until creamy.

    4. Gradually add the sugar, the eggs, lime rind, lime juice, and vanilla, and then mix well until smooth.

    5. Put the cheese mixture evenly over the vanilla wafers.

    6.Bake the cheesecakes at 350° for 20 minutes until they are almost set.

    7.Let the cheesecakes cool completely on a wire rack, and remove from the pans.

    8.Spread the vanilla yogurt evenly over the cheesecakes, and top each one with kiwifruit slices.

    This amount makes 12 servings
